Resumo

The baru (Dipteryx alata Vog. Fabaceae family) is a typical plant from Brazilian cerrado whose oil extracted from the seeds is popularly used as antirheumatic and regulator of the menstruationcycle. The interest in evaluating phytosterols in vegetable oils is due to its application in the prevention of dyslipidemia, cardiovascular diseases and its protective activity against tumors stimulated by estrogen.This study aimed to contribute to the chemical knowledge of the species, in particular, the relation ofthe content of free and total phytosterols. It was necessary to develop and validate an analytical method by GC-MS to quantify free β-sitosterol in the baru oil.The concentration of other phytosterols was estimated using their relative areas in the chromatogram. To quantify the total phytosterols was performed a mild saponification of the oil, at room temperature in order to hydrolyze the binding of esterification and the released phytosterols are then quantified.The total concentration of phytosterols was 1464.41 mg/kg and it was identified campesterol, stigmasterol and β-sitosterol. The concentration of free phytosterols was 1195.49 mg/kg. β-sitosterol was the major compound,found in both forms. Phytosterols identified in baru seeds allows to suggesta correlation with the biological activity observed in its popular use.
