Aspectos de qualidade interna e externa de ovos comercializados em diferentes estabelecimentos na região de Goiânia

Resumo

Two experiments were conducted to evaluate the quality of white eggs obtained in the supermarkets of Goiânia, Goiás (Brazil). In the first experiment, farm eggs of white shell and traded at supermarkets, small markets, open street market and eggs directly from the farm were evaluated. In the second experiment, poultry farm eggs with free range eggsand enrucged eggs (with ômega-3) enriched. Poultry farm eggs and supermarket eggs were better on Haugh Unity and yolk pH. On the other hand, these eggs were not significantly different on egg weight, albumen percentage, yolk percentage, shell damage percentage and dirty eggs percentage. The enriched and free range eggs showed the worse results to internal quality. It was conclude that the eggs of worse quality were that obtained from open street commerce and the best eggs were obtained directly from the farms. The enriched eggs were worse of internal quality regardless of their origin.
