Resumo
The aim of this work was to study economic viability for implementation of a
system for collecting and drying the pulp residual potato in the processing line of potato chip,
as well as its use in snacks with the but of the reuse of agroindustrial residue as new
ingredient for the food industry. The payback method was studied, this is a direct valuation
method, which calculates the number of years that will run the cumulative cash flows
equaling the amount of the initial investment. The results obtained shown that company will
save 19.8% wheat flour monthly, with the replacement of wheat flour by pulp washing
residual dehydrated potato (PRLBD) in the processing of snacks. The payback for the
purchase and implementation of a system for drying PRLBD will be paid in approximately 16
months. This study demonstrates that the project is viable from an economic standpoint, and
contribute to reducing environmental impact and sustainability of the company, providing a
correct destination for agro-industrial residues.
