Resumo
In this work the
guariroba (Syagrus oleracea, Becc) was submitted to treatment with solutions containing
peroxidase (POX) and poliphenoloxidase (PPO) inhibitors. Guariroba slices were
immersed in 0.5, 0.8 and 1.0 % (p/v) citric acid, lactic acid and sodium bisulfite solutions,
for 10, 15 and 20 minutes. The phenol contents and the enzymatic activities of POX and
PPO were measured before and after treatment with the inhibitor solutions, as well as
solution pH. The best results for both enzymatic inhibition and phenol content were
obtained when the guariroba slices were treated with 1.0 % lactic acid solution for 10
minutes.
