Thus, this research uses the perspectives of consumption anthropology, health and disease anthropology and food anthropology to analyze speeches of people assisted in public health services and compare them with current biomedical hegemonic discourses about eating. The methodological strategy was the observational qualitative ethnographic study (participatory) and, as a tool, semi-structured and open interviews were carried out at Clinical Hospital (Goiânia, Goiás) and Family Health Units (Trindade, Goiás). Fundamentally, the research aims to analyze the categories, influence factors, values and meanings involved in the representation of the ideal and/or healthy eating of people who are in a dietary change process under the guidance of nutritionists and who went through some disease process and currently have a biomedical diagnosis of obesity.Item Dos usos turísticos do patrimônio alimentar: formação cultural e os mercadores de comida típica na Cidade de Goiás(Universidade Federal de Goiás, 2015-02-25) Barbosa, Filipe Augusto Couto; Collaço, Janine Helfst Leicht; http://lattes.cnpq.br/9655194212314066; Collaço, Janine Helfst Leicht; Abdala, Mônica Chaves; Tamaso, Izabela Maria; Silva, Joana Aparecida FernandesThis research is an investigation around the appropriations of food heritage for cultural tourism purposes at the locality best knew as City of Goias (that is the County of Goias/State of Goias/Federative Republic of Brazil). The focus of the work is to unravel the social relations involving entrepreneurs dedicated to the production and marketing of ‘typical food’ ‒ in particular, the owners, managers, cooks (or Chefs) and confectioners, of restaurants, cafes and pastry shops ‒ and the forces that act on cultural tourism, mainly, trying to understand the relations between food heritage and touristic commodities, and how it becomes emblematic (or not) of a hegemonic local cultural heritage. Therefore, we sought to stablish connections between emblematic products, representations of local cuisine and the socio-cultural changes that determined the food heritage uses, domestically and in consumption by cultural tourism relations. The method used in this investigation approaches to those identified with the ethnology, or those that have in common the interactive observation of native subjects life, resulting the research in a text based on experience; and were employed also survey techniques and the photographic record directed to a symbolic analysis of objects and products. From the experiences and thematic studies with the field we conjectured about diversity andconstancy of cultural flows that historically crosses the cuisine of Goias, demonstrating their particular importance, and noting the ‘power’ element in the subalternization of certain heritages, which characterizes the internal dispute in the construction of a harmonious hybrid image (in favor of the merchandising in tourism relations). In this context, may be also appreciated that most of the producers and merchants of 'typical food' in the City of Goias are heirs and promoter of these subaltern traits and that, in one hand, having been employed in houses, farms and stores of the hegemonic culture families, they have incorporated and hybridized certain elements, reproducing strategically some of these according to the market demand, and that, on the other hand, introducing products based on the food heritage that they identify to themselves, strengthening the subaltern cultural matrices in the historical background of this locality.Item Veganismos.br: um estudo etnográfico do ciberativismo vegano no Brasil(Universidade Federal de Goiás, 2020-03-11) Duarte, Fabíola Ribeiro; Collaço, Janine Helfst Leicht; http://lattes.cnpq.br/9655194212314066; Collaço, Janine Helfst Leicht; Abonizio , Juliana; Roim, Talita Prado Barbosa; Menasche , Renata; Silva , Joana Aparecida FernandesThe use of the internet is part of the daily life of a good part of Brazilian society, and, mainly, of social networks, which have functioned as facilitators for the propagation of information. As a result, social movements, such as veganism, have gained increasing visibility. This dissertation aims to reflect on how the vegan movement occupies Facebook, a wide-ranging social media or social network, establishing social relationships and its political strategy for mobilizing, creating and disseminating content. And yet, to reflect on how the neoliberal capitalist logic works in the sense of appropriating some speeches of the movement in an attempt to co-opt its members for the process of normalization of conducts favored by a Uni-World ontology. Considering the various elements that come together to form an understanding of a social world without “animal exploitation”, the anthropological look is an important tool to analyze how people who are part of the vegan social movement have their practices, customs and relationships changed because they consider that humans and animals have similar rights, due to being sentient beings, and how they use social networks to publicize their way of life and at the same time to strengthen themselves by maintaining relationships with other vegans. The “eco-social” products are made by several traditional communities of the Brazilian Cerrado biome, those products are benefited in the Federal District. Using the ethnographic method, the research leaned on the theoretical framework of urban anthropology and brought people who coexisted from the moment of structuring the local soccer to the moment that this sport underwent major international, national and local changes through globalization, dialoguing with David Harvey in questions of passage of time and changes in space and its implications in football. To carry out this qualitative research, ethnography will be used as a lived experience, adapting according to the situation, to identify the variables around this relationship between subjects and cuisine, based on theories that refer to the anthropology of consumption, food and urban throughout the dissertation . The research strategy, through cyberspace and face-to-face space, due to the current context of transition between the pandemic period and an endemic one in our society. From this, this text presents the conditions for the research, experienced field factors, relationships between the researcher and the interlocutors, information obtained in the text that lead to the construction of the notion of memory, tradition, identity and street. These aspects are related to the cuisine of “Pit Dog”, such as being on Rua 10, in Goiânia, changing and adapting to the movement of the city. Thus, the main object of research, the kitchen of “Pit Dog”.Item Classificar é preciso? The last two chapter of the study covers the urban representation, through of the rural work, by Folia de Reis. For this, analyses beteween the “inside” and “the outside” (or “others”), was constantly addressed. Finally, this work search, through the district, understand and explain what specific classification limit places which are located in the “inset” rural/urban, and the analyze of the native representation are fundamental for understand the possibility of this transit between this two possible universe of the district. Terms like hybridity and continuun will be addressed.Item Entre cozinhas e quitandas: patrimônio e globalização em Pirenópolis(Universidade Federal de Goiás, 2017-08-28) Toralles, Katia Karam; Collaço, Janine Helfst Leicht; http://lattes.cnpq.br/9655194212314066; Collaço, Janine Helfst Leicht; Menasche, Renata; Silva, Joana Aparecida FernandesThis piece of writing/essay exposes the way of living and working of the quitandeiras in Pirenópolis, revealing how they represent the changes the city has gone through in the last 20 years, being driven by its development and by the increase of tourism. It starts from the recognization of the quitandas in the urban context and finds its way through the domestic universe to learn the meanders of this producing process, and to unveal the stories of the women who produce it. The activity produced by the quitandeira is seen as a part of the nutrional models which are exposed to the daily flows of information and people. Women take parte of this process/movement as agents of a social recomposition, giving a meaning to food and to the act of eating. The production of quitandas is a vector of the women empowerment, and a portrait of the changes in the local urban dynamic.
