This type of interaction reflects the behavior of microorganisms, demonstrating the ability to inhabit different environments, capturing the information of their environment, communicate with different species, monitortheir population density and mainly regulate their gene expression by controlling cellular processes such as sporulation , biofilm formation, expression of virulence factors, production of bacteriocins and antibiotics and bioluminescence. It is also believed that cellular communication system play important roles in the microbial ecology of foods, both in the deterioration of these products on the multiplication of pathogens and toxins.porAcesso AbertoBactérias deteriorantesComunicação celularDoenças veiculadas por alimentosPatógenos alimentaresSpoilage bacteriaCell communicationFoodborne diseasesFood pathogensMecanismos de quorum sensing e sua relevância na microbiologia de alimentosMechanisms of quorum sensing and the importance in food microbiologyArtigo
