Guariroba slices were immersed in 0.5, 0.8 and 1.0 % (p/v) citric acid, lactic acid and sodium bisulfite solutions, for 10, 15 and 20 minutes. The phenol contents and the enzymatic activities of POX and PPO were measured before and after treatment with the inhibitor solutions, as well as solution pH.
