Item Sistema de apoio à decisão de gerenciamento de risco de Clostridium estertheticum, em matadouro-frigorífico de bovinos(Universidade Federal de Goiás, 2011-10-07) MELO, Camila Silveira de; REZENDE, Cíntia Silva Minafra e; http://lattes.cnpq.br/5841210447886226; MESQUITA, Albenones José de; http://lattes.cnpq.br/3180029815183858Abstract: Blown Pack is a process of spoilage which characterizes by the build-up of gas in the package of chilled meat cuts, causing a repulsing aspect. In Brazil, this spoilage has been described in many States, mainly meat for export, which needs longer shelf-life. The main cause of blown Pack is attributed to Clostridium estertheticum, a bacteria which multiplies easily in long-term storage at refrigeration temperatures and also in anaerobic organisms found in vacuum-packed chilled meat. The management of these bacteria in the flowchart of slaughter is very difficult due to its sporulated shape, easy dissemination and growth during the meat processing. Having said that, this work aimed to propose a decision support system for risk management for Clostridium estertheticum in the flowchart of bovine slaughter and vacuum-packed chilled beef cuts. Hence, it was carried out an identification of Control Point and Critical Point Control for bacteria as well as a risk classification and quantification in the process of vacuum-packed chilled beef cuts. The decision support system was based on the concept of Risk Assessment and Bayesian Networks. The system elaboration was performed at Shell Netica program. The probabilistic was manually input during the meeting with experts on the area. The first proposed structure of the system was elaborated for classification and quantification for microbiological risks, having as a parent node, a Risk Characterization of blown pack. The children nodes, linked to the parent node, were elaborated and based on Risk Exposure and Hazard Characterization for microbial deterioration in blown packed spoilage in meat cuts. In the second part of the proposition of the system, it was selected the slaughter operations and the determining factors of contamination in the processes. The parent nodes indentified the contamination risks and the children nodes the slaughter conditions. The system performance was assessed by specificity and sensibility. The proposed model presented a satisfactory performance, being reliable to the productive reality. The system presented high risk for blown pack for C. estertheticum, lactic acid bacteria and Enterobacteriaceae. Concerning its performance in identifying the contamination risk on the flowchart of slaughter, it has been high, with 100% of specificity and sensibility. The proposed model presented clear diagnosis, showing the operations that need more attention by the risk manager‟s part.Item Níveis de lisina digestível na fase pré-inicial para pintos de corte provenientes de ovos de diferentes pesos e idades de matrizes(Universidade Federal de Goiás, 2011-02-25) SANTOS, Januária Silva; ANDRADE, Maria Auxiliadora; http://lattes.cnpq.br/9441751521255467; MASCARENHAS, Alessandra Gimenez; http://lattes.cnpq.br/9082632592936909; STRINGHINI, José Henrique; http://lattes.cnpq.br/8505634095383289In this research, we aimed to evaluate the digestible lysine levels in pre-starter diets in the histomorphological development of 18-day embryos and newborn chicks. The performance until 21 days and dry matter digestibility and nitrogen balance in pre-starter rations and allometry of digestible and immune organs until 14 days of age. Three experiments were performed in the Avian facilities and in the Preventive Veterinary Medicine Department of the Veterinary and Animal Science College of the Federal University of Goiás, Brazil, with fertile eggs obtained from breeders in different ages and eggs with different weights at the moment of hatching. In experiment 1, effect of breeder ages and egg weights in the internal quality was evaluated during incubation period and its relation with embryo development until hatch. In experiment 2 digestible lysine supplementation in pre-starter diets for chicks hatched from eggs of different breeder ages and in experiment 3 for chicks obtained from eggs with different weights at the first day of hatching period. A total of 320 day-old chicks were allotted in each experiment in a completely randomized design and factorial arrangement 2X4 (breeder age: 34 and 52 weeks or egg weight: 56-65g and 66-72g and digestible lysine levels: 1.1; 1.2; 1.3 and 1.4%). Embryos and newborn chicks were necropsied at 18 days of incubation, at seven and 14 days after hatch, and collected samples of the small intestine (duodenum e jejunum) to prepare histological slides and gastrointestinal organs weighed. At hatch, chicks were weighed and allotted in battery cages from four to seven days of age and the metabolic assay performed in total excreta collection. Performance variables performed were final chick weight, weight gain, feed intake and ffed conversion. Nitrogen balance and nitrogen and dry matter coefficientwere calculated. Villus height and crypt depth were determined in histological sldes of duodenum and jejunum. Data were submmited to variance analysis and polynomial regression performed for digestible lysine levels. In experiment 1, breeder age and egg weight showed negative correlations with Haugh unit and positive correlation to percenual of albumen, yolk and eggshell, with embryo weight at 18 days of incubation and chick weight at hatch. In experiment 2, no interaction was observed between breeder age and digestible lysine levels in pre-starter rations. Chicks from older breeders showed better performance. In experiment 3, performance and digestibility were not affected by the increasing levels of digestible lysine in diets or egg weights at the moment of hatch.
