Avaliação microbiológica do leite pasteurizado tipo c, comercializado no estado de Goiás no período de janeiro a junho de 2000

Resumo

In the present study, ninety-nine samples of pasteurized milk-type "C" commercialized in Goias State were submitted to microbiological analysis from January to June in 2000. The results obtained showed that from all analyzed samples, 49 (49.5%) did not agreed with the microbiological standards of the Brazilian legislation. Eight samples (8.1%) were classified as "unsatisfactory hygienic conditions product" due to mesophilic aerobic bacteria colonies counting, 39 samples (39.4%) disagreed with total coliforms standards, and 23 of these (23.2%) were considered as "unsatisfactory hygienic conditions product", 7 milk samples (7.1%) as "unacceptable product to consumption" and 9 (9.1%) were classified as "inappropriate product for consumption" The counting of fecal coliforms showed 14 samples (14.1%) as "unsatisfactory hygienic-sanitary conditions product", 20 (20.2%) were considered "unacceptable product to consumption" and four samples (4.0%) as "inappropriate product to consumption", according to specific' legislation from the Ministry of Health (Portaria 451/97). Therefore it is important to adopt hygienic procedures to improve milk production and transportation, and implement appropriate surveillance mechanisms milk farm until commercialization. A rigorous inspection during pasteurization and package phase is essential to guarantee a product with minimal hygienic conditions according to the brazilian legislation.
