Qualidade microbiológica da carne homogeneizada comercializada em um hipermercado de Goiânia (GO)

Resumo

Seventy samples ofhomogenized meat produced and sold by a supennarket from Goiânia (00), were analysed, in lhe period from February 1996 to October 1997, in arder to evaluate lhe microbiological quality. Toe microbiological ana1ysis were mesophilic and psychrotrophic plate count colifonns, fecal coliforms and Escherichia coli most probable number (MPN), Salmone/la research, Streptococcus of D group MPN, Staphylococcus (positive coagulase) enumeration and sulfide-reductor clostridia enumeration. ln general lhe results indicated lhe good microbiological quality of lhe products. However, three positive samples to Salmonella were found, standing out lhe necessity of a permanent contrai, to avoid lhe transmission and dissemination of foodbome diseases.
