Avaliação microbiológica de equipamentos que entram em contato com a carne bovina durante o abate em matadouros frigoríficos de Goiânia- Go

Resumo

Microbiological evaluation of equipment utilized in slaughterhouses in the city ofGoiania, Brazil. The sanitary status of 26 equipment samples whích are utílízed in butchering bovines from two slaughterhouses in Goiânia cíty were microbiologically evaluated by standard plaque counts of mesophilic and psychrotrophic microoroanisms, enumeration of yeasts and molds, total coliforms, coagulase positive Staphylococcus and the presence of Salmonella sp. Mesophi􀇫ic counts were identified in 100% of the samples, 42,3% of psychrotroph1c, 19,2% of yeasts and molds, 73, 1 % of total coliforms and 3,8% of coagulase positive Staphylococcus. No Salmonella species were found on the studi􀂶d equipment (stainless steel tables and trays and saw biades). These results d1d reveal that the saw biades were more contaminated than other equipment. This study demonstrated that the industries evaluated did not follow the standard sanitary procedures recommended by Brazilian Federal Inspection Service.
