Aspectos epidemiológicos e resistência aos antimicrobianos de Salmonella sp. na produção de frangos de corte

Resumo

Salmonella sp. is among the most widespread micro-organisms in nature, having man and animals as main natural reservoirs. This pathogen is considered one of the important agents responsible for outbreaks of foodborne disease in humans. The occurrence of salmonellosis is a consequence of interrelated factors, such as food, the environment, vectors, men, utensils and equipments, the production line, animal transit and animal reservoirs. Moreover, many studies have confirmed the role of foods of animal origin as a source of multi drugresistant Salmonella serovars. This paper reviews the information available on Salmonella, contamination routes for broilers and antimicrobial resistance of strains isolated of poultry products.
