Resumo
The aim of this paper is to outline a brief history of the concept of gastronomy,
showing how established itself in the contemporary world and its impact on the national
scene. We shall discuss some relationships that allow understand how this concept gained
attention, exploring the notion of cooking and the emergence of different processes such as
heritage recognition, valuation of local products among others.
