Ocorrência de Salmonella sp. em carcaças de frangos abatidos e comercializados em municípios do estado de Goiás

The occurrence of Salmonella sp. in food has been a crucial topic of worldwide concern. Under this circumstances, the present study was undertaken to investigate the presence of Salmonella sp. In broilers young chickens slaughtered and commercialized in the State of Goiás. From July to December 2006, 363 chicken carcasses samples were collected from slaughterhouse inspected under the Federal Inspection Service. The samples were assayed by conventional bacteriological analysis, and the bacteria were isolated in 52 carcasses. Eleven sorovars and four antigenic formulas were found: Salmonella Albany, Salmonella Enteritidis, Salmonella Saintpaul, Salmonella Schwarzengrund, Salmonella Tennessee, Salmonella Infantis, Salmonella Mbandaka, Salmonella Panama, Salmonella Muenchen, Salmonella Emek, Salmonella Typhimurium, Salmonella enterica subspecies enterica 45:-:1,7, Salmonella enterica subspecies enterica 45:-:1,2, Salmonella enterica subspecies 4,5:-:-, and Salmonella enterica subspecies 6,7:-:-. As 14.32% of samples were Salmonella sp. Positive, these findings point out a risk to the public health, and also the contaminated chicken meats and their sub-products might be a hazard for food safety.
