The objective was to determine the effect of sanitizing, experimental bacterial contami-nation and cooling the eggs weight loss during the storage period of 30 days. Ninety six eggs were used and weighed every three days. The experimental design was a randomized block in factorial 2 x 2 x 2 (x sanitizing contamination x storage temperature), with six replicates an egg and the experimental unit. The sanitizing eggs was performed by washing with warm water containing chlorhexidine and 20% active content 8% chlorine. After the eggs were contaminated in the shell, by handling for 10 seconds with 1.5 x 105 colony forming units (CFUs) of Pseudomonas aeruginosa / mL and were stored at 5 ° C or 25 ° C for 30 days. Cooling maintained the internal egg quality even when there was con-tamination on the shell with inoculum of Pseudomonas aeruginosa. It was concluded that the refriger-ation retards weight loss and provides better internal quality, physical, and chemical eggs within 30 days of storage, independent of contamination and sanitization process.
