Qualidade bacteriológica de meias-carcaças bovinas oriundas de matadouros-frigoríficos do estado de Goiás habilitados para exportação

Resumo
Many are the bacteriological standards adopted by
some countries to verify the quality of the imported bovine
meat. Among these standards, in the most of these countries,
bacteriological analyses are included as: counting and determination of the Most Probable Number (MPN) of the
indicative microorganisms, besides counting and pathogen
research. The present study aimed to evaluate the
bacteriological quality of half-carcasses originated from
slaughterhouse-freezers of Goiás State, Brazil, qualified to
export, and to offer information so that the federal organs of
regulation and inspection to specify standards for those
meats. In this experiment, 160 half-carcasses bovine were
appraised, hot and refrigerated, from June to September,
2004. The following analyses were accomplished:
determination of the MPN of total Coliforms, fecal Coliforms
and Escherichia coli; counting standard of aerobic mesophils
microorganisms, strict or facultative, counting of
psicrophiles microorganisms, counting of coagulasepositive
Staphylococcus and counting of Clostridia sulfitereducer.
The obtained results revealed that bacteriological
quality of half-carcasses was acceptable for the main
microorganisms to evaluate the “bacteriological status”,
and, also, that there was no statistical difference among the
results of the bacteriological analyses for both hot and
refrigerated half-carcasses. However, there is a need of
constant evaluation to improve industry’s quality control
systems, in order to prevent that the alues, maintained in
acceptable levels, as well as the effective bacteriological
standards established by importer countries will not be
xceeded.
